NOTTINGHAM, MD — The fast-casual Mediterranean restaurant CAVA is planning to open a new location near White Marsh. The eatery will be next to Nalley Fresh in Nottingham Commons. CAVA offers build-your-own Mediterranean dishes. First, diners pick a base of grain, salad or pita. They can also combine bases and opt for a "greens and grains" bowl or a soup and pita. Next, people select dips and spreads like tzatziki, crazy feta, eggplant, hummus, red pepper and harissa. Then they add proteins such as braised lamb, honey chicken, falafel, meatballs or roasted veggies. And finally they top off the dish with cabbage slaw, tabbouleh, Kalamata olives, white bean salad and others. Check out the menu. For its build-your-own experience, CAVA has been called the "Chipotle of Mediterranean cuisine" by Forbes, which reports the company also sells its sauces and spreads in nearly 500 Whole Foods markets. In 2018, CAVA acquired Zoës Kitchen. The spot where it plans to open near Perry Hall is in the location where Zoës Kitchen is off Campbell Boulevard by Nalley Fresh, Pie Five and my eye dr. While it is not clear when the restaurant plans to open, it has started hiring. CAVA is looking for team members to work at the chain for $13.50 an hour. It will be the first restaurant for CAVA in Baltimore County. The restaurant reportedly began as a single eatery in Rockville in 2006 and has expanded to include nearly 80 restaurants. Its other Maryland businesses are concentrated in Montgomery County, where it has locations in Bethesda, Gaithersburg, Potomac, Rockville and Silver Spring. It is also in College Park, Columbia, Frederick and Hanover.
